San Diego’s bustling Convoy Asian Cultural District in Kearny Mesa will soon have a new neighbor — Sot BBQ.

The Korean BBQ restaurant, which is expected to open in late July or early August, will prepare and grill vegetables and meat on the hot surface of cast-iron cauldrons, which were imported from Korea. According to Eater San Diego, one cauldron will be placed at each table in the newly renovated restaurant on Clairemont Mesa Boulevard.

The exact history of the Korean cauldron, sot, is unclear. However, archaeological evidence suggests that similar cauldrons have been used for cooking in Korea since at least the Silla period (57 BCE – 935 CE). These cauldrons were likely made of cast iron or earthenware and were used for boiling, stewing, and braising over open fires.

The sot’s design has remained relatively unchanged over time, reflecting its functionality and effectiveness for traditional Korean cooking methods. Even today, the sot is still used in Korean cuisine for making stews, soups, and other dishes.

The restaurant, which will have capacity for 10O people, will be open seven days a week, from 11 a.m. to 11 p.m.
